Josie Gibson reveals how she lost 6st in a year - and she's written a book so you can do it too!
  • Josie  went from a size 20 to a size 8
  • Launching new book on how to love food, get slim and stay slim
  • Exclusive extract from The Josie Gibson Diet - plus her ten-step rule

Josie Gibson, 29, has released a new book on how to love food, get slim and - most importantly - stay slim.
The Big Brother winner from Bristol shed an incredible six stone over a year. A combination of a strict diet and exercise regime helped her slim down from 16st 7lb and a size 18 to 10st 2lb.
Now MailOnline brings you an exclusive extract on sugar from her book, The Josie Gibson Diet - plus Josie's ten-step rule that she follows to this day.

Step 1

First and foremost you've got to learn to love who you are and like yourself. If you don't like who you are you're never going to treat yourself with good nutritional meals and you will never think you're worthy enough to be the best that you can be.

Step 2

Set a goal, invision it and make sure that image is in your everyday eyesight. As I began my weight-loss journey, I placed an iconic image of Raquel Welch on my fridge to keep me motivated.

Step 3

Track your results! Take the first picture when you begin your journey, and every week thereafter. People who track their results are 98 per cent more likely to achieve their health and fitness goals.

Step 4

Write down your wake-up calls! Note down every single thing that made you want to lose weight and get healthy. These wake-up calls, when written down, will open your eyes to the fact you should have done this sooner.

Step 5

Prioritise your life. Your diet and fitness should be at the top of the list. A healthy body and mind makes you amazing at everything else in life.

Step 6

Throw away all the processed, high fat and sugared foods in your cupboards and make sure you READ YOUR FOOD LABELS! Your body is the most important piece of kit you'll ever own - you need to know what's fuelling it.
Unfortunately the majority of people in the UK eat and drink too much sugar without even realising it. A lot of sugary foods and drinks, especially alcohol, can contribute to weight gain which is why it's so important to check food labels for their contents.

Step 7

Organise your food - the moment you get hungry is when your hands will begin to wander. Snacks which you will find in from my book helped me keep the munchies at bay.

Step 8

When you've reached a goal, reward yourself!  Do something that you've always wanted to do but your weight has stopped your from attmepting. I recently went snowboarding!

Step 9

Exercise regularly. Within my new DVD programme the 21 Day Fat Burn (see teaser below!) you get three workouts designed to raise your metabolic rate, build up muscle and burn fat. This can be done three times a week from the comfort of your own living room with amazing results!

Step 10

If you fall off the wagon, don't get disheartened. All you need to do is get back on and keep going!

Josie on sugar - plus her favourite recipes

It turns out that sugar is hidden away absolutely everywhere in food products, and it can cause way more problems than just extra visits to the dentist.
Think your brown bread is healthy? There's 1.6 grams of sugar in every slice. Ever thought your bagel tasted a bit sweet? That's because a plain one can have the equivalent of a whole sugar cube (4.8 grams) inside it. Reckon baked beans represent one of your five a day? They may well do, but they'll also deliver you a 9.9-gram hit of sugar per portion.
When we imbibe the white stuff, neurotransmitters in the brain react the same way as they do when we drink alcohol or take drugs. Over the years we become tolerant to it and need to increase consumption to
get same the hit off it as we once did. Put simply: Sugar. Can. Kill. You. Slowly.
As if all that weren't bad enough, sugar also ages you and kills off the elasticity in your skin, so in addition to making you ill, it makes you look old. I honestly think that the reason I haven't been left with rolls of loose skin is because I gave up the white stuff before I'd even started losing weight. It was one of the first things I did and so the elasticity returned to my skin.
I knew I loved sugar, and had done since I was a child, but when I looked into exactly how much I consumed, I was shocked.
On my one-day-a-week treat days, I will normally have a few glasses of bubbly or some other sweet treat, but otherwise my diet is totally sugar free, other than naturally occurring fructose in whole fruit – and has been for nearly two years.
I still crave it and I always will, but my habits have now changed. I spent over twenty years as a sugar addict, and I'll always be in recovery because it's impossible to cure yourself of an addiction. I still can't have it in the house because I know the temptation is too much.

SUGAR-BUSTING PUDDING RECIPES

AVOCADO CHOCOLATE PUDDING
Serves 2 - Prep 5 mins - Chill 3 hours
Ingredients
1 orange
2 ripe avocados
2 tbsp raw cacao powder
1 tbsp agave syrup
pinch chilli powder
splash vanilla extract
pinch salt
fresh blueberries and mint, for garnish
Method
1. Zest and juice the orange. Place all the ingredients except for the blueberries and mint into food processor and blitz until you end up with a mousse-like consistency. Alternatively, you can
mash the ingredients together and stir until they're as smooth as you can get them.
2. Place into small glasses and refrigerate for at least 3 hours. (The pudding can be prepared a day in advance.)
3. Garnish with fresh blueberries and mint before serving.
The Rules: Avocados are high in fat (around 14g per fruit), so enjoy them occasionally. This isn't a pud to make every day.
The Goodness: Avocado is a superfood, rich in protein, ‘happy' fats and vitamin E. It's actually a fruit, but it's great used in savoury cooking and salads.
